Hot for Chocolate & Zucchini Muffins

FREAKIN’ amazing.  Chocolate and Zucchini go together like peanut butter and jelly.

I’ve created about 30 different recipes now, some from other recipes I adore that I put a healthier twist on and others off the top of my head.  I’m learning tons about baking and healthy substitutions and gluten-free and there WILL be more to come!  There are a couple of substitutions you can make, cause that’s how I roll!

*If you want to do gluten free, make sure the Oat Bran is Gluten-free.

*If you want to go Paleo on these muffins, substitute Coconut Flour for the Oat Flour.  They will be a bit more dense, so you can use a little more almond meal if necessary or egg whites.

*If you want to go a bit healthier and use these in your week more often than as a cheat, use dark chocolate instead of milk chocolate. *There is 1/4 cup of light brown sugar in these, but everything in moderation.  This makes 12 muffins, so it’s spread out.

*Obviously, if you are preparing for a show or something along those lines, most baked goods are not for you.  I believe in moderation and finding healthy substitutions for ingredients we don’t realize we have a choice to include or discard.

1.5 cups Oat Flour *if you want them less moist and more with a Pancake flavor (so good!) I get Gluten Free Pancake Mix. Do this in moderation though.

2/3 cups Almond Meal

1/4 cup Brown Sugar Light

1 1/4 tsp. baking soda

1/8 tsp. xantham gum

1/2 tsp. salt

1/4 cup unsweetened almond milk vanilla

1 large egg

3 Tbsp. egg whites

1 Tbsp. vanilla

1 Tbsp. Lemon Juice (my secret!)

1 1/2 cup Shredded Zucchini (I used a cheese grater)

1 cup unsweetened apple sauce

1/2 cup Chocolate Chips, milk chocolate

Stir together dry ingredients.  Beat in eggs and vanilla.  Add in zucchini and chocolate chips softly and lastly.

Bake 325 1 hour.  Makes 12 medium muffins.

*a great source of fiber.

      these are sooo good girl! and if you make them with Gluten Free pancake mix….even better, but only this way in moderation;) And as far as being allergic to coconut, it won’t ruin the consistency, just take a little of that coconut flavor away. that’s ok!

    HI there…new here…just reading your site and noticed these muffins. After reading, was thinking. for those on a no sugar or even low sugar diet…you could just add cocoa powder…light or dark depending on your preference. This would give the muffins a great choc taste without the sugar from the chocolate chips. To reduce even more sugar, maybe do 2 tbsps of brown sugar and 2 tbsps of Stevia. I use Stevia in my protein bars all the time, very good! Anyway…just a thought!! 🙂

    from one penny pincher to another, i have started grinding raw sunflower seeds and using them in place of almond flour. MUCH cheaper and similar nutritional content.
